Homemade Chocolates.The molds are cheap and so is the chocolate. They have a huge variety of molds, some are religious and many are holiday themed. You can also dip pretzels, marshmallows, oreos, potato chips and strawberries. Then get a nice basket or tray and arrange. Best part is you made it yourself. Include card with a huge donation to church.

Time off. If you can find a way to give him time off, do it.
Being a Pastor is probably the toughest calling there is. Truly time off, because you know it's 24/7.

I don't think it is a good idea, to give gifts to your pastor.
I think it sends wrong messages.
If you really appreciate him, tell him at the end of a service, with others in attendance when he is told. This will convey appreciation of his work as a pastor, as opposed to your appreciation of him as a man.
