1. What is sweep-picking or sweeping on the guitar?
2. And I've heard it's pretty difficult to do? Why?

The trick with sweeps is to keep it as one fluid motion rake the pick down and then up. There's also a lot of very slight muting of the strings with both your left and right hand that is impossible to explain here using just text.
Even in showing somebody in person it's kinda tough to explain it cause it's played so quickly.
The general idea I guess I'm trying to get across is that it takes a loooong time to learn how to do this.
Like we're talking weeks, months or possibly years before you get really good at it. (depending on how much you practice). You have to give yourself the time for your hands and mind to start muting, sweeping and picking subconciously rather than thinking about every step. Only when you've gotten to the point where you don't have to think about it anymore can you really excell at this kinda stuff.

Sweep Pickinh is one of the most dificult things to do on guitar... Sweep P is Arpeggios pick in a very fast way and arpegios are the notes in a chord not strummed but just pick from lowest to highest notes or vice versa.. and good example of sweep pick would be Michael Angelo Batio consider one of the best shreders to be a live.. heres a link of him playing sweep pinking.http://youtube.com/watch?v=qG74eVb6V10 the first 8-12 notes is an example of sweep picking. and there are several examples on the video.

Edit-- if you want to learn how to play sweepinking heres a great site! http://ibreathemusic.com/article/190

Its not that hard, I learned it in 2 days. Go to www.ultimate-guitar.com and search the forums for sweep-picking. You will find a thread that talks about how to do it.

Eruption is done with "hammer-ons" and "tapping" - while you're good-exceeded, those are performed with 2 or 3 hands from the left hand and one from the splendid hammering on a string.
