It very much depends on exactly where you are a royal princess.
In England, there are no particular duties, but if you are in receipt of payment from the Government (i.e., you are on the Civil List) you are expected to do something for it - usually being patron of a charity or attending openings of various things.
Princess Anne does a lot of this sort of stuff - in fact, other than the Queen, she is the hardest working royal

A princess is to be well behaved, not out on some treasure hunt with the stable boy.
You can also visit the link below to see what Queen Elizabeth did for her Royal Duties.

Act stuck up, be mean, scream at servants, direct orders like telling a servant to stick his head in a toilet, smile till you die, have all kinds of air fresheners so no one knows you farted, and bark like a mad dog. These were the negatives.
Be super sweet when friends and older royalty are around, party all the time, have all kinds of foods, clothes and accesories, being known as a princess, well duh, smell all gorgeous, attract cute guys, and have all the luxuries for a lifetime. I know these are not all duties but these are what most princesses might do. Just a guess and to all the princesses out there please don't be offended by my words

Bogus Man has the best answer so far, but I would add that on certain rare occasions there are some constitutional duties to be performed when the sovereign is out of the country, such as acting as a counsellor of state, I believe.

Mostly lounging around, going to the gym, spend hours applying makeup and spending enough to fund a hospital wing for a month on a pair of shoes. Oh, and employing a host of cranks and loonies to advise what is in ones stars/fortune/destiny etc.
Easy life!
