The new sweet potato side dish at Outback is wonderfully tender. Almost like they mashed the potato and put it back in it's shell. But, it is obvious that the cooking method is the key, because the potatoes have not been re-stuffed. How do they do this?

Well most sweet potatoes are really tender to begin with.

To get the potatoes really tender, you just have to slowly steam them or grill them for a long time on a low heat.

well heres a little trick
#1 Wash potatoes thoroughly
#2 soak the potatoes for 2 hours in a water bath,
#3 rinse then drain,
#4 Place the potatoes on the oven's middle rack, spaced evenly.
DO NOT WRAP IN FOIL
#5 Bake about 1 hour. Smaller potatoes may take less time. Larger potatoes may take more time. You want the potato nice and soft.
#6 After about 40 minutes, poke the potatoes with a fork to test their progress.
#7 When tender, carefully remove the potatoes from the oven, cut lengthwise and serve immediately.

You could make a great brown sugar butter for the sweet potatoes just mix some brown sugar with some room temp butter and viola

i watched this on british tv about 3 days ago - the chef baked the sweet pos in foil with a big knob of butter then opened the foil for the final 10 mins so they had a crispy skin - YUMMY!
