You could try doing something along the lines of seeing how long it takes mold to grow on different foods or see how long it takes to rust nails made of different metals. Maybe you could buy (or grow) some small pea plants. Then buy some different colored light bulbs or wrap the lamp with a colored wrap and place each plant under a different light color and observe the results.
A fun one that I did for my science fair project last year was seeing which fruits could light up a small LED light. That was my favorite by far.
