At the moment "Wish Upon A Star" by Olivia Goldsmith. This is a re-read because, when ever I want to feel motivated to do something or go somewhere, this book does it for me. The Daily Mail describes it " If you're after escapism, it doesn't come more enchanting than this". The sad part of the whole thing is that Olivia actually died just after completing the book. Worth a read.

The Diamond Throne by David Eddings and the rest of the series.
I first read these books when I was like 12 or 13 and just fell in love with them. I re-read them at least once a year. The writing is excellent and I absolutely LOVE the main character Sparharwk and the other characters except one. It just took me to a different world and I could stay there as long as I wanted.
I also love the Belgarion series by David Eddings. I re-read them at least once a year as well.

There are dozens of books that are worth reading over and over again. Books are relevent to their purpose and where you are in life (Dr. Suess just doesn't cut it as an adult). However, one of the few books I read for enjoyment over & over again is Property of a Lady by Elizabeth Adler and Princess Bride by William Goldman. Both are lighthearted fare without being brain-numbing and stand up to repeated readings without losing its edge.
