We just love BBQ turkey, which is actually easy to do.
You need to put a small foil pan in the BBQ (we use
a foil bread pan) and you surround it with the briquettes,
get them going and when they are ready, you put (soaked)
hickory pieces on the coals. The turkey is rinsed, I have
a metal rack it sits in (sort of a v shape rack) I quarter
a couple of onions and salt the interior of the turkey, placing
the onion quarters inside. Wrap the wings and legs with foil,
as they cook thru faster than the body, this slows them down
a bit . Put the turkey in the center of the BBQ and cover with
the lid. Leave it shut for about 1 1/2 hour for a 15lb. bird,
then check it, its done when the legs move freely.
The bird turns out moist and delicious, with a hint of the
hickory flavor...its the best. I never bake a turkey anymore,
this is our favorite way to cook one.
Just remember the foil pan, as a lot of grease cooks off the
bird and the foil pan keeps the grease off the coals, which
could cause a flare up.
