That is a funny question.

Pork is home to a host of parasites, such as the worm, Trichinella spiralis, from which we get "trichinosis" a specific type food sickness that many people confuse with other types of food poisoning. Pork has even been made taboo for all the death that eating it has caused. So, must be cooked thoroughly or cured.

To cure ham it is soaked in a brine (salt water). This process is not only to preserve the meat for long voyages at sea, but also to help to kill the parasites the meat may be infected with.
