I'd have to agree with Pachebel's Canon in D... it's so beautiful.

I also love Chopin's Fantaisie-impromptu and Yann Teirsen's Comptine d'une Autre été : L'après-midi

Rachmaninoff's 2nd Piano Concerto (no vocals, but you need an orchestra). A powerful, dramatic Romantic work (and pretty well known). The Grieg Piano Concerto is a close second.

well its done multiple ways (ie orchestrated) but i love Pachabel's Canon in D
