Electronics Technology is just the study of individual components and their role in a device or system. This has more of a role in digital technology such as computers.
Whereas in Electrical Engineering you lean more towards industrial uses of electrical systems. This has more of a role in electrical distribution systems.

In my area the definition is equal to unemployed. We recently had a couple of major employers leave and have a surplus of techs. My husband graduated and has still not found local employment in his major.
But a more general description of the major is:
Electronics technology majors learn the basic skills needed to operate, maintain, install, and repair electrical and electronic equipment.
