There has always been liquor of some description and certainly right back to the cavemen. This is not the only generation who have discovered the delights of getting drunk.
Ales have been brewed for centuries and spirits have been distilled from the time fire was discovered.

The Chinese distilled a rice based spirit as early as 800bce. Most of the other early spirits were fruit based, ie brandies. They, I'm sure became very popular as soon as the word spread. One of the reasons for making the stuff, beside the obvious fun factor, was economic. It allows you to reduce the bulk of obviously fragile soft fruit produce and difficult and expensive to transport grain into a much smaller package that can be moved more easily and sold at a profit far afield from where it was produced. Alcohol is also useful as a solvent in the production of pharmacuticals and cosmetics.

We know for certain from archaeology that as far back as the neolithic various alcoholic drinks were made. The earliest written texts mention wine, strong wine, beers and spirits.

I now liquors were used a lot because water was usually unsanitary...where they started I have no idea.
