I need to consider, & how do I actually 'employ' my husband ??

This really depends on how you set up your business. But in a general sense you could do a number of things.
1 employ him as casual labor if it is just for a short period of time.
2 hire him as a full time employee. You can get some of the forms from an office store. Tax forms can be found online.
3 Take him on as a partner but see a lawyer about that one.
4 Hire him as contract labor if he will be using his own equipment.

depends if you pay him as an employee than there are payroll taxes and deposited to the IRS and State Gov't for the payroll taxes withheld and so forth. And as a worker you may need workmans comp insurance and so forth.
now if he just helps you out and does not get paid and you happen to take some of your profits and he gets the money as your loving husband than you pay taxes at the end of the year just like you do now when you withdraw advances or show a profit
