I'm writing an essay on "evening hawk" and I am just lost on what the structure of a poem means, if someone can help me, that'd be great :-D

Usually, it means the meter, the number of lines and stanzas and recurring forms. Also, it includes the rhyme scheme (if there is one), such as ABAB or ABBA or similar.

the structure of something, is how you set something up in most cases, or "the frame."
sentence structure includes nouns, verbs, pronouns, correct form, and so on...
aside from that, I am not exactly sure, what else it could be, or what you might be asking
