In order to pull the carriage, the horse exerts a force on the ground.
The ground in turn gives an opposite force.
Because of this force the horse moves.
But the carriage opposes this motion of the horse.
The horse pushes the ground with enough force so that the reaction force exceeds the force opposed by the carriage.
Net result is both horse and carriage moves.
The origin of all these forces is the force exerted by the horse on the ground.

The force is generated by the horse caused by the chemical reactions of the neurons telling the muscles to contract. The power of the muscles is from the conversion of chemical energy into mechanical energy. The horse hoofs come into contact with the ground. The friction between the hoof and the ground prevents the horse from marching time in one place and not getting anywhere. The forward motion of the horse is exerted to the carriage is through the harness and yoke that is attached to the horse.

I think it's the horse exerting force on the ground. Or rather his potential energy being converted into kinetic energy. So, KE=.5 mass * speed squared. Because he's pulling the carriage too, the mass would be the carriage + him. KE is measured in Joules.

Hmm.
I'm not exactly sure about the first question, but I'm pretty sure it's momentum.
And for the second 2, he is exerting the force on the ground. When he pushes with his hooves the ground is recieving that push. It's kinda of both. When he pushes his hooves to the ground, the ground recieves that push, and it pushes him forward in a sense. For your needs, I would say he's exerting the force onto the ground.

i'm a vet, blinders are so the sunlight would not get into their eyes, horses have somewhat mushy eyes, additionally they get frightened incredibly and get distracted, so as that they use the blinders so the horses won't have the ability to study or sideways. And horses PULL carriages.
