Think is a state verb so cannot be used in the present continuous. Similar to know (*I am knowing) and like (*I am liking)

Are you trying... the verb "to be" is used as an auxilliary verb because it is in the present continuous. Only use "to be" as an auxilliary in continuous and passive forms.

You would be correct in saying:

Do you really thing that the earth isn't moving?

"Do you try to fool me?" means "Do you make a habit of trying to fool me?"
"Are you trying to fool me?" = "Are you fooling me right now?"
"Do you really think that the earth isn't moving?" = "Is it your belief that the earth isn't moving?"
"Are you really thinking that the earth isn't moving?" = "Are you really thinking right now that the earth isn't moving?"

Next tiem you have this problem try saying it over to your self and see which sounds right because it proberly is.

PP4865 is correct, although I'm very curious as to why you would need to include these statements (particularly the second) in every day conversation?
