Vinegar dissolves the calcium in the egg shell which is why I use it to remove hard water spots on my stainless steel sink! Some people actually dilute it in a glass of water and drink it to help their arthritis.

I think it's to do with the acidity of the vinegar eating away at the outer layer of the eggshell. I'm no scientist, but felt sorry for you because noone had answered your question.

It dissolves out the calcium carbonate. Somebody cleverer than me can probably give you equation
