it is actually to keep their feet warm. they rotate which leg they stand on and tuck the other one up into their feathers to get it out of the mud and water for a few minutes and into a warmer spot.

Flamingos frequently stand on one leg. The reason for this behavior is not fully known. One common theory is that tucking one leg beneath the body may conserve body heat, but this has not been proven. It is often suggested that this is done in part to keep the legs from getting wet, and in part to conserve body heat and energy. In addition to standing in the water, flamingos may stamp their webbed feet in the mud to stir up food from the bottom.

because the flamingo has exceptionally long, thin legs it is difficult for its heart to return blood from its feet. Therefore, by standing on one leg and occasionally switching, the flamingo prevents blood from collecting in its feet.

They do it purely to resist the urge of kicking water in the lesser species Ducks faces. This way if they cant resist the urge, then they simply fall over.

They often live in lakes that are very caustic as well, so lifting the leg provides relief.
