You can use any stitch you like. I usually use a soft yarn like Soft n Gentle. http://www.lionbrand.com has tons of good patterns to give you some ideas.

What is the best yarn? Depends....are you thinking you'd like cotton (because spring is coming) or acrylic with a tad of wool?
For cotton, I wouldn't use the cheap yarn like lion brand. Normally I like lion brand for a lot of things, but I do not like their cotton and I hate their microfleece or whatever. The strands (or plys) do not hold together very well at all. So, if you are thinking cotton, I would recommed either Classic Elite or Tahki Cotton. I have made stuff with that and really liked it.
I have made acrylic afghans with Caron's Simply Soft. The colors are pretty, the yarn really is soft, but it didn't hold up. There are already holes in it and it's just for my daughter's dolly.
So....I would recommend using Encore, or Brown Sheep Cotton, or Lion Brand Acrylic. And Patons---anything Patons---I love that yarn. It's not as cheap as Red Heart and Lion Brand, but it's not as expensive as the other stuff.
Now....for a stitch: The Lion Brand website has tons of free afghan patterns. Lots of very simple ones if you're new, but some others that are more challenging too.
Now you've got me going! I want to go make a baby blanket!

Any stitch will do.
For yarn,I recommend something soft, sturdy, and washable.
If you have a few days before starting, try elann.com or knitpicks.com for buying good quality yarn cheap.
Consider chunky yarn, or using 2 or more strands and big gauge needles. I've started two gorgeous blankets on #7's and regretfully have abandoned both.

i think that you should use alpaca because its really soft. if you can find a machine washable blend, that would be good because its more convenient for washing. there is a really good baby blanket pattern in Debbie Stoller's book, which you can look up online.
