A fetus sex is determined by the sperm at the time of conception. The sperm will either carry an X or y chromosome which will mate with the moms X to make either a boy Xy or girl XX. The actual sex of the baby cannot be seen until approx 18 wks via abdominal ultrasound.

I think the sex of an embryo is determined as soon as the egg is fertilised. I may be wrong.
