Have to admit "Frank and Stein" is very clever and catchy name for a casual bar and grill.
The idea of the sign, coupled with that name does, however, leave an image more of a hot dog stand that sells beer, rather than a bar first that also happens to sell franks and other food items.
My suggestion is "Last Call" signifying the obvious "saying" associated with bars that are ready to close down for the night.
But, more importantly,"Last Call" would also mean that after a long day of work or whatever, visiting our bar is a relaxing way to end your day.

You could ask/research locally for an someone or something historically interesting.
For Instance, in Yeovil, Somerset, UK , Weatherspoons opened a new Pub and called it The William Dampier, who was the first mayor of Yeovil, and an amazingly interesting character.

Don't open a bar.My sister did that and there was a fight every night.She had to close it down before somebody got seriously hurt.She named hers"Road House"(It was obvious why,lol)
