White has always been thought of as the color of purity and cleanliness. Black has always been associated with mystery, darkness, evil.
The above has nothing to do with people. No person is actually white, and none is coal black. We're all shades of the same color. There are lighter shades and darker shades, but actually all the same basic color.

It's a cliché, like purity impersonated by a blonde and sin devoted to brunettes in a number of movies. Makes things easier to convey and spares money and time in explaining things to people.
