Why? Why not a cube shape or even extrememly oblong? Or shaped like a 3D pancake???

Sphere is the simplest geometry. and since gravity is dependent on the distance between two center of masses, it is a natural form to take ( especially if the plant is not spinning super fast). In cases, where the matter is light ( cloud) and is at a longer distance from center, and if the rotational speed is large, we may see rings ( like what we see over saturn).

We may have seen or photographed the complete surface of just 1-2 planets, Who knows what is the shape of a star ? I will not be surprised if it is STAR shaped.

Gravity, and the sphere is the smallest shape that a mass can take when exerted on by a central pull, such as gravity provides.

because gravity from the object pulls dust and other space debris equally on the object which would make it spherical
