i never make assumptions about people's ethnicity. i have two close friends who are mexican but i never even wondered what their heritage was it never crossed my mind to think about "what they were" they were just people. most of my friends have a different or mixed ethnicity so it's not something i notice.

i have no idea why people make assumptions.

I don't get that all the time. I get Vietnamese, Filipino, Mexican, Italian, Brazilian, East Indian, American Indian (which I am).
I guess because we tend to see Caucasian people as having very little pigment in their skin and therefore any pigmentation suggests some other nationality.

I once made the mistake of calling a puerto rican girl a mexican and she broke me from that. She wanted to kill me! After seeing the rage on her face... oh man...

Why do pepole do that?
Because they're ignorant. Easiest way to put it.
