During the past few months, the diversity of goods available on markets increased steadily. Most of the food items *constituting of the diet* are now available, along with seeds and fertilizers. Only shrimps and local rice are still rarely found, as it is for meat (cow or goat) except in special occasions.

The word 'of' shouldn't be there. It should have read 'constituting the diet', meaning 'making up the diet'.

The passage has been written by someone whose first language is not English. This is clear from a number of points, such as his (her?) use of the wrong tense in the first sentence. It should have been 'has been increasing', rather than 'increased'.

It means "making up the diet", though it's a very untidy construction. "constituting the diet" would be more stylistically acceptable.

most likely it means "included in the diet".
