single cell proteins are the unicellular organisms with high protein content which can be used as a rich protein source .they can be eaten raw since they do not have side effects and are almost tasteless. some are

spirulina - it is a prokaryote i.e a moneran which has the max protein content of any food on earth and many people normally include it in their daily diet. it is very useful and i recommend all readers to start having it
chlorella- a unicellular green alga found in abundance and is also used in space vehicles as a source of oxygen and protein.has high protein content but not as much as the former.

The selected microorganism is inoculated in a pure state. 5. SCP processes are highly aerobic (except those using algae). Therefore, adequate aeration must be provided. In addition, cooling is necessary as considerable heat is generated. 6. The microbial biomass is recovered from the medium. 7. Processing of the biomass for enhancing its usefulness and/or storability.

Do you mean single celled ORGANISMS? If so, then the best examples are yeasts which are used in the making of bread and beer, and bacteria, which are used in the making of cheese and yogurt.
