Greek mythology is long gone now, and we may never get to understanding what they were precisely meaning by "immortal" for a god. Let's say they could be considered immortal under "normal" circumstances. But Cronos was a very special god in that he was at the beginning of creation (if you don't take Ouranos into the picture).
My own personal interpretation (and I might be totally mistaken at that) is the Greek made a play-on-word between the name Cronos (the god) and Chronos (Time). It would figure if you say in a symbolic sense that Chronos (the Time) eventually eats his children, cuz' that's exactly what happens in real life. Time is eating us all, gods and humans alike.

The soul is immortal as we are all gods. Our soul hides itself in the protection of the flesh which renews itself with each birth or death.

Only gods can kill other immortal gods. That's the way I always looked at it anyway.

Chronos didn't kill them. He was trying to stop a prophecy that one of his children would banish him like he banished his father. He ate all of his kids except for Zeus. Chronos's wife hid Zeus. So Chronos ate a rock instead of Zeus. He grew up, banished Chronos, and set his brothers and sisters free.
