Try the official Sun documentation.

No one book (at least no good book) covers basic to expert. Any step of the process is going to be at least 1000 pages, and that's without going into too much depth.

First you have to learn Java. Then, they'll go into how databases, HTTP, and all that work. It's just too broad of a subject for just one book. (my favorite author on these topics is Ivor Horton. I also like some of the Dummies books, but these don't go very in depth. I think the O'Reilly series is too dry and over rated.)

The main problem is getting the practice in. Most cheap web hosts don't let you use the full J2EE (if any).
