A rock is a dormant thing and does not grow. The reason that they are still around is that they do not erode quickly. Some do, but most weather the rain, dust, heat and cold and remain about the same for thousands, even millions of years. Some rocks can be traced back many million of years. Some even billions of years.

No it does not grow back. Mountains are shaped by earthquakes, wind, and water. There is plenty of rock all around. The only way it could grow back is if there were a volcanic eruption spewing out magma that hardens into rock.
