Well, the best two things to try first, would be glass cleaner or plain ammonia, or the new dawn dish foam. I know those are chemicals, but ones that most people have around the house. Windex cleans all my knicknacks, metal, plastic and ceramic that has tobbacco tar on them, and the dawn is what I use to wipe down my tea kettle after it's been spattered by grease when sitting on the stove too many weeks in a row.

Now that everybody has recommended on how to clean your kitchen chimney, or range hood. I really recommend in purchasing a new filter. Just like your heating filter, a clean filter will give you better air circulation, and it'll keep your kitchen from smelling like old grease. The filters can be purchased anywhere the range hoods are sold. They also don't cost that much.
Here's more info from a range hood maker:
"How often should I clean my filters?
The aluminum mesh grease filters should be washed in your dishwasher approximately every month depending on the amount of usage. Wash often if your cooking style generates greater grease like frying foods or wok cooking. You cannot clean the non-duct carbon filters; they must be replaced.
Baffle filters, which are used in professional style range hoods products, are designed to operate longer in high grease conditions without loss of performance. Generally, these need to be cleaned with soap and water whenever the surfaces become unsightly.
How often should the non-ducted range hood filters be replaced?
It depends on the frequency and type of cooking that is performed. Normally, every three (3) to six (6) months is recommended for replacing the charcoal filters. Some charcoal filters are designed with an indicator mechanism that will change color as a signal to replace the filter.

When cleaning kitchen cabinets of touch cooking grease,, there are a few commercial products that are very effective Be sure to read the back label to find the kitchen cleaning product that best suits your needs. You can also try using baking soda for a more environmentally friendly alternative or a mild detergent, such as that you would use to wash your dishes, to cut through grease. You can also try cleaning kitchen cabinet doors by combining a half cup borax, two tablespoons laundry detergent soap flakes, one tablespoon ammonia, and one gallon of warm water. Use full strength in spray bottle or add two cups to a pail of warm water. If any stickiness remains, try using baking soda as a scrub agent. Apply it directly to the area - it should remove any residue without harming the finish.=)

A common detergent liquid like Pril would work just fine. But in this case you will need a scrubber to scrub out the grime. Should take you 15 mins for 2 trays.

Kitchen chimney, your talking about stove hood, right? The best thing I've found is dish washing detergent, "Dawn". That grime is grease that forms while cooking.

Try some warm water and Dawn dishwashing detergent. I find it works well on the hood above my stove. It's great for cutting grease. Do it in small amounts so the water stays hot-warm while you're working with it.

If you have a dishwasher, just put them in there. otherwise soak them in your sink with a solution of hot water and dish soap and rinse about 2 hours later.
