Have a pie auction and the members of your student council/government and staff faculty/board members to participate. All you need is some tin pans,whip cream, chocolate syrup and toppings for those that want to bid a little higher. I would start the bidding for your faculty (maybe the dean) at a higher rate than every one else. Promote it to assure plenty of potential bidders. Don't forget to mention to bring cash!
Another idea,similiar to your bake sale,right now that it's cold. Consider having a hot cocoa/coffee or ramen noodle sale. Have three stations in different locations throughout the campus.Have some hot water,cocoa envelope packets, whip cream and cinnamon on the side for the cocoa and some boiling water readily available for the ramen. We did this during a winter sale. We didn't feel too confident about the ramen,but it sold the most and brought in the most money as well. We only accepted donations for everything so many people donated out of generosity. We purchased our stuff at Sam's Club. We maybe paid no more than 50.00. Maybe you can incoporate your bake sale with your cocoa or coffee.
You can also arrange with the campus to place recycle bins throughout the building (this can get messy and some will be rude about not paying attention to what they throw).Encourage student support through flyers,newsletters,campus announcements,etc. We called ours Trash for Cash.
Another idea, challenge students and faculty to donate items they want to get rid of,ie.,clothes,home furnishings,toys,books,movies,tools,etc. Designate a date and a location where everything will be displayed for sale. You can price everything, but it's much easier to have folks name their price. This way you just have to collect,store,display and sell. Promote it through churches,your campus,community resource groups. What you don't sell you can donate it.
