I know why on the show - Grissom is taking a leave to teach a class, he's supposed to be back in 4 months. As to what's up with WIlliam Peterson.....no idea.

He's gone on sabatical for 4 weeks (in the show) to teach a college class on insects. In real life I don't know. You could check the cbs.com website and click on the CSI link to see if there is anything there about it.
