I don't remember if they show her dying, but it is obvious that she does whether they show it or not.

She was in the shower in some hotel and this flying saucer UFO thingy suddenly whizzed down and sucked up all the water from the planet Earth to take back to their dry planet and the stepmom caught a cold and died of lemon bon bon poisening.

Yes, that was why she had Isabel (Julia Roberts) photograph her and kids so much, it was for the kids' memories after she was gone.
