After they are declared dead they are taken for an autopsy and then released to the family for burial or cremation. If their is not a family the state is responsible for the body and depending on the wishes of the inmate they will be buried and a state declared cemetery or cremated.

In many states bodies are interned in the Prison cemetery. Some states will allow the next of kin to claim the body and bury it where ever they want to move them too.

Tomorrow's prison meatloaf? No. It's not up to the prisoner. If the family don't take the body, a hole is backhoed up and burial follows. It's not like he's going to heaven or something.
