Lots of fanfic has been written about that question, but mostly from the other side-- what did Sarek see in her? But some women find emotionally detached men a challenge; he was obviously someone of importance and probably wealth in his society or he wouldn't have been an ambassador; and besides, he wasn't a truly emotionless. If he had been, he wouldn't have been estranged from his son over his choice of career. Also there has been great debate as to whether sex was limited to once every seven years or if just the pon farr compulsion was once every seven years.
Or he might have just been worth waiting for every seven years!

Actually, they could have sex whenever they wanted, it was just that once every seven years they HAD to have it. And plenty of women would love a man to want her for something other than sex.
