Should I get any other work done while the engine is torn apart?

Headgaskets cost upwards of $900. If you plan on keeping the car for a few more years, have it replaced. While the engine is apart now would be a good time to replace the waterpump, timing belt, and any seals or whatnot that have caused the engine to lose compression, IF it has. Those are the only things I can think of.

Before you tear into the head gasket just understand that a defective intake gasket will cause similar problems. Have the engine chemical tested to check for a blown head gasket and maybe save yourself time and money not to mention work. Good luck.
