Because of TV. When soccer was first aired on TV, all TV's were black and white. The ball would appear grey and get lost on the screen. The pattern was added so the viewer could see it better on the screen.

Obviously the ball looks cooler when it's multi-colored. Probably also easier for the eye to follow while it's flying through the air.

really simple if a white ball is coming at you and its spinning would you be able to tell? the colors are for the players to recognize spin, spin has a major impact on how the ball is played and what kinda of bounce it is going to have
