I need to open a port on my network, but haven't needed to do it before. Any idea on where to start looking? Or should I go straight to my firewall and look there instead of in Server 2003 (Standard)? Thanks!

Clearly you dont know too much. Ports are opened once a service is installed. So if you want to have Windows 2003 receive email you need to install SMTP. You will then also need to open the port on your firewall.
