Priests! You can't beat converting their elephants into your own elephants! Those beasts are tough...

Spearmen/javelins are best against elephants... treat them as cavalry units, as they have the same vulnerabilities. Elephant units are cavalry units with higher hps/damage and slower speeds than horses, but otherwise the same as far as game mechanics are concerned.
Ballistas, as mentioned above, may be good, but you have to actively keep them retreating or protected as elephants can walk through a group of ballistas fairly easily.

In my experience, Centurions (upgraded spear militia: Hoplite -> Phalanx -> Centurion) can dispatch them without too much trouble.
If you cannot afford/do not yet have Centurions, the lower spear militia units are very good defense, just not as effective, so you'll need a few more of them.
Great game, absolutely loved it when it was first released, and still play the sequels. :)

As mentioned, Ballistas, Priests.
I tend to try to block them, then use the "Attack Ground" on the Ballistas and aim where the elephants are trying to break through.

try useing balistas and it it dosnt work press enter and type em2trooper,bigdaddy and photonman
