The term "head over heels" actually used to be called "heels over head" which was popular in Europe a while back. "Heels over head" meant "unusual" or "out of the norm" because (obviously) your heels being over your head isn't normal :). It was sometime used to describe love and relationships as being "out of the ordinary" in a positive way. It somehow got twisted around to "head over heels," at some point, which obviously makes no sense.

The first mention of love comes in 1834, by which time the phrase had crossed the Atlantic, and into David Crockett's Narrative of the life of David Crockett:

"I soon found myself head over heels in love with this girl."

when you say "we" your generalizing everyone in one category. Not everyone is normally happy all the time.
