Greenland and Vinland (Newfoundland, and possibly other parts of what is now eastern Canada).
Although they settled Iceland, the Norse (technically "viking" was something they did, not who they were) didn't discover it. Pytheas, a Greek, wrote about it in 330 BC and in addition to Irish monks who sought hermitage there in the early centuries A.D., it's also quite possible that Pictish sailors and walrus hunters were using it as base.
However, the Norse also discovered the "Eastern River Route" through the Baltic Sea and down to Byzantium. One Norse tribe, the Rus, ruled and gave their name to the country that is now Russia.
To do all this, the Norse discovered/engineered really well made boats - their longboats, drakkar and knarr, were able to both sail the rough north Atlantic, and navigate European rivers. That is no mean feat!
In addition they were excellent craftsmen and metalworkers.

I agree that the Norsemen were quite the pillagers on their raids during their heyday in Europe but I do believe that in asking this question the best answer would be the discovery of Iceland, Greenland, and, by Leif the Lucky, North America.
Today in Newfoundland, you can see the archeological evidence of their time in N. A. at L'Anse aux Meadows. This site was first investigated by Dr. Helge Ingstad. It is now a UNESCO World Heritage site.

The longboat and its ability to traverse turbulent waters and even somewhat cross the Atlantic Ocean. It also helped them in raids and left a lasting impact in the memory of those attacked.
I'm not sure if you can call an invention a discovery, but without it what would the Vikings have been?

Greenland and North America, When they arrived in Iceland they found it full of Irish priests who they then murdered. Its probable that they Irish told them about the lands to the west since in fact irish munks saided to Greenland and North America in the 700s.
