I'm visiting Amsterdam in a few months. Is there any famous literature that takes place in Amsterdam? (Aside from the diary of Anne Frank)

I don't know if they're "famous" books, but "Confessions of an Ugly Stepsister" by Toby Maguire is one. Another is "Girl with a Pearl Earring" by Tracy Chevalier. I don't know if your looking for Amsterdam-specific stories, but both these stories take place in Holland and both are good reads. "Girl with a Pearl Earring" was even made into a movie.

I don't know about famous, but I enjoyed Postcards from No Man's Land by Aidan Chambers. It was very interesting. Don't get turned off by what happens to the guy in the first chapter or so. The book is good.
