If I videotape someone in a quick interview and post the footage on a website, am I required to have them sign a waiver? None of their footage would be considered detrimental (i.e. pornographic) and their real names would be withheld. Would I still need them to sign a waiver for something to the effect of a 60-second clip to be posted on a website?

No. The only time you would need a release is if you were to use the person or his likeness for commercial gain or in a way that would suggest that the person is endorsing or promoting a product. A straightforward interview that is presented as such is within your First Amendment rights to publish.
