Well given that you didn't give us the sentence, but just a phrase and we have no idea that "their" is reffering to, it is impossible to tell. But my guess would be that "guts" reffers to the contents of whatever "their" reffers to. But it could also be a metaphoric statement. I can't tell given the information.

Out of context it is hard to guess, but the image that comes to mind might be a stack of folders that open up and spill their file contents.
