Economics and management enterprise is enough, no need to add either 'a ' or 'an' or 'at'

If you are referring to an enterprise for the first time in a sentence (or writing), you can use 'an' before 'enterprise'. If you have already referred to the enterprise earlier, and wish to give reference to it again, then use 'the'. Generally, 'a' is not used before 'enterprise'.
In case you want to use 'enterprise' in a sentence like 'Joan lacks enterprise' (meaning initiative), then there is no need to add a or an or the before the word.

I don't think such a thing as "enterprise economics" exists because "economics" necessarily includes _all_ business (it is the study of the whole system), not just new enterprises. And I'm doubtful that "enterprise management" is a correct or widely recognized term, either.

You've spelled it correctLY, but I'd use one of the following:
"Speciality: Economics and Enterprise Management" - or -
"Speciality: Enterprise Economics and Management"
whichever better suits your intention.

If you don't know the name of the enterprise then you should insert "the" if you are talking about a specific enterprise. If you are just talking about a general enterprises, then you insert "an".
