I'm willing to bet that it will have the word "nano" in it. Subcellular macromolecules are the wave of the future. Although cellular engineering-- supplanting or improving upon natural cellular processes/structures-- or the creation of the artificial cell would be interesting too.

Desalinization. We will soon be in desperate need of water for drinking, agriculture etc. Global warming is rapidly making the problem more severe.

it's got massive potential.
(when humans have the power to manipulate every atom, then what'll be impossible? for instance one can rearrange atoms of soil to make potato, rearrange atoms of carbons to make diamond- diamonds will get cheap then!)
