When they get to the park they can rent scooters. If they've got trouble walking, that is the way to go.
If they rent only one they can share - one walks the other rides and they can trade off. And, if you've got a scooter, you drive right up to the front of the attraction line and get assisted on and off.
Even though they're not into rides, they shouldn't miss some really great "rides" like Living with the Land, Spaceship Earth, Ellen's World of Energy, and the Nemo at the Living Seas
Epcot will keep their interest - they can wander around that park for days.
If they are at a Disney resort they can go to the desk and someone will give them great ideas on what not to miss in the amount of time they have available.
They'll have a great time. Disney is THE BEST at accomodating people that are physically challenged.

I would recomend the Magic Kingdom. Rent scooters when they arrive. I forget exactly how this works but if they talk to the cast member who they rent the scooter from and explain their problem they should be able to get a pass where if they decide to go on some attractions they will be able to backdoor them so they won't have to stand in really long lines. There are actually some things that they might enjoy because the Magic Kingdom has many rides that are quite suitable for people of all ages. Plus they have shows, parades, fireworks etc. Epcot is nice also as is MGM and Animal Kingdom.
Another tip is that if they rent the scooters at one park then they can use their proof of payment at the other parks the same day and that way they will not have to rent them at each park if they are park hopping.
Also if they need to put anything into a locker you can get into the lockers all day now not just once.
If they make any purchases they can either have them sent to their hotel if they are staying on properity or they can have them sent to the pickup location near the front enterance of any park so they will not have to carry them all day as long as it's more than three hours before park closing. Then if they have it sent to the pick up location they can pick it up when they are ready to leave even if that's after park closing.
City hall cast members are always happy to help if they need any more information on what would make their visit easier.

It depends on whether you're a boy or girl. I think boys would love Disney-MGM Studios because of the thrill rides (Twilight Zone Tower Of Terror and the Aerosmith Rockin' Roller Coaster), and also they have this awesome new show that's come in from DisneyLand Paris. Lights! Motors! Action! Extreme Stunt Show. It's so awesome, I can't even explain. I wish I could've seen it twice. Definitely get a FastPass and show up RIGHT ON TIME or a little early. The regular line is ridiculously long. For girls, I think many will still love the Magic Kingdom. But for both girls and boys, Epcot is awesome. Epcot is my favorite park. Spaceship Earth inside the Geosphere is the BEST Disney ride. Test Track, Soarin', Mission Space, Maelstrom and El Rio Del Tiempo are all so much fun. I still love the educational stuff though... like Ellen's Energy Adventure and Living With The Land, or the Living Seas Pavilion. And of course, World Showcase is fantastic. And the fireworks show Illuminations: Reflections Of Earth will blow anyone's mind!

I would recommend EPCOT has the #1 choice. EPCOT is more of a see park than a do park. There aren't as many attractions and the World Showcase is home to artifacts from those countries, wonderful food, shopping and more. Also consider ordering them park hopper passes so that they can visit the Magic Kingdom, and if they get bored, they can leave and visit another Disney park that same day.
Wheelchairs also might be a great idea since visiting the parks can involve a lot of walking. Wheelchairs can be rented at the main entrance to each park.

Great answers by everyone here....
Disney's Epcot is the best for them.... Arrive early (when it opens) and go until lunch time (when it starts getting crowded) leave and go to hotel for a break and some lunch (maybe a nap) and then head back or visit MGM in the afternoon.... maybe two days but reverse order on the other day to catch the night shows (fireworks etc) at both parks. If they are Baseball fans and coming in March... Wide World of Sports hosts the Atlanta Braves Spring Training home http://www.springtrainingmagazine.com/atl.html
Sea World is a fantastic park... great shows and exhibits
Universal Studios Orlando is also a great option because there are alot of shows as opposed to rides.
South of Orlando is Winter Haven and there is a park there that used to be called Cypress Gardens and has been revamped an reopened by new owners... I just saw it ranked as the best Florida park for value because it isnt as expensive as others... lots of floral exhibits and shows.
Kenedy Space Canter would be a great place and is about 445 minutes to an hour from the Disney area.... Buses take guests around to different launch pads and exhibits throughout the complex and by checking the schedule you can see if there is a luanch of some type of space craft the day in question.

Other spring Training Baseball teams in March:Houston Astros, Toronto Blue Jays, St Louis Cardinals, Tampa Devil Rays,LA Dodgers, Cleveland Indians,Florida Marlins, NY Mets, NY Yankess, Washington Nationals, Philadelphia Phillies, Pittsburg Pirates, Cincinati Reds, Boston Red Sox, Detroit Tigers, and Minnesota Twins all play with a 90 minute drive from Orlando.

I think EPCOT would be best. This is a tour of many countries around the world. They could relax a little more and would probably be more interest in various countries and clutures than the special effects of MGM.
However, anything you do at Disney, means standing in line. Their best bet might be to arrive around 4 in the afternoon instead of getting there when the gates open... it's not as hot, and the crowds are starting to thin out a bit.

I would suggest Epcot. There IS something for everyone there. I really enjoy the World Showcase the most. It's neat to see different countries and to try the food from each country and see what different types of classic architecture come from each country. I think your parents would really enjoy that. AND, there are plenty of places to just stop and rest for a while!
