Depends where it is, there is one in my hometown that has a story behind it see link so likely to be something similar

Dun is an old word meaning brown, derived from "dung"... so it's literally dun (or dung)-coloured cow.

I guess a pub called "The Poo-Coloured Cow" wouldn't attract so many customers...

I've also seen pubs called "The Dun Bull" and "The Dun Horse"
