Here are some good ones if you haven't seen them:

Inuyasha (very good series! romance, drama, action, fantasy.. it has it all)
Dragonball Z (not exactly a "deep" anime series, but still entertaining)
Ruroni Kenshen (this series was great at the beginning, but it kind of petered out)
Ghost in the Shell (a lot of political stuff, but still very good)
Wolf's Rain (very different, but I liked it a lot)
Neon Genesis Evangelion (very interesting series! the ending was messed up though!)
Rahxephon (a lot like NGE, but still good)
Hellsing (short but sweet)
Witch Hunter Robin (good series in a "goth" sort of way)
Cowboy Bebop (the main character is just sooo cool)

I'm currently in the middle of Ergo Proxy.. it seemed to be a little slow starting out, but I'm on episode 10 and I'm starting to like it a little more..

I'm not sure I'm in to shoujo mangas but hmmm there should be a strong fighter girl while they are on their journey and the should join forces and the girl can have ??? Power ( your decision ) and a giant hammer for weapon. Some one like sakura from naruto. She should have two long pigtails for hairstyle and her main goal is to bring back the real Japan as well. She should also be an orphan child

Busou Renkin is from the creator of Kenshin. And IMO, its better than bleach even though it has the usual 26 episode run. But if youre mature enough for it. Try watching Death Note. It's pretty much dead on with the manga version so far. So you dont have to read the manga.

I can't believe nobody suggested Death Note yet!! :D

Its a really addicting and new series! Unfortunately, Viz Media licensed it, and its going to be dubbed on American Television, so get the most out it while you can,...or better yet, read the manga!

You can watch the 1st episode here: http://youtube.com/watch?v=FF5BGMhOj8c

Cowboy Bebop is awsome and totally worth watching every episode 100x over. I've been watching Samuri Shamploo, that is decent too.
