It's largely historical. Survival of the fittest, done out in economic terms as much as anything. During a famine, the higher castes eat even when the lower ones don't, and they get more protein to build good brains. India has suffered severe famines in historical times. Ask your parents and grandparents.

But the interesting thing is the more recent famines in India had people leaving rather more than dying. They caused a large dispersal of the Indian population that was able to scrape up the costs of travel. It's a case of "not enough to eat here, I'll go seek my fortune elsewhere." And the ones that had the money probably also had sufficient education that they prospered where they went. And they sent money home, and they came home with money to invest. And now India is growing economically because of a very well-educated, very modern young population that are ready to take on all comers.
