Typically, the stage manager has a directing training background and is working to become a director. It gives an up close and personal view of production and involves solving problems related to direction of the show - handling personalities, making sure people are on time - that are good experience, that are normally not the ongoing problems of the director who creates the show.
The floor manager typically is handling problems related to house management - getting people in the auditorium on time, dealing with ticket problems, making sure supplies are available, etc. More of an administrative position.
I went to Southern Methodist University 30 years ago and at that time they were constructing a theater management program. Whether that program was developed or not, several people who were there with me went on to be stage managers at summer Shakespeare programs and small theater operations.
As in any college program, what happens over time depends on the people there. You might talk to a nearby program and ask what the current reputations of various programs might be.
